Fall Vegetables (Or 101 Uses for a Farmers' Market Pumpkin?)

Well, although we Ofolk consume loads of veggies, I didn't do such a great job blogging "a vegetable a day" for Vegetarian Awareness Month, now did I?

Having roasted a pie pumpkin a few nights ago, we have a lot of pumpkin puree on hand. Last night we ate pumpkin risotto. Tonight we ate black bean and pumpkin soup. I'll try to get around to posting recipes & photos within the next few days. Until then, I encourage you to try this totally yummy chipotle guacamole, which My Dearest O loves. As a bonus, it's also easy-peasy.
