101 Uses for a Ripe Garden Tomato: #14--Chips & Dip


I admit this salsa is a bit of a cheat, because it's made with only one tomato in the whole batch (approximately 4 cups). The main ingredient is tomatillos.

I usually make salsa with tomatillos. Both because we like it that way and because just a few tomatillo plants yield enough fruit to keep us in salsa throughout the year. Here's the basic ingredient list: tomatillos, hot pepper, onion, garlic, lime juice, cumin, and cilantro. Sometimes I add other ingredients, like tomato or sweet pepper.

For this batch, I roasted a bunch of tomatillos (sorry, don't know how many), a few cloves of garlic, one serrano pepper (that's all it took!), one Walla Walla onion, and one Green Zebra tomato. After it cooled, I chopped it all up in the blender and then added lime juice, cumin, chopped cilantro, chopped garlic, and chopped red (Mars) onion to taste.

As usual, we enjoyed our salsa with homemade corn chips (one ingredient recipe coming some day).

yup. I do salsa when we get an over abundance of ripe tomato and tomatillo from the farmer.
